Tomato Basil Quiche





Fresh Tomato Basil Quiche
(From my garden)

2 TBS olive oil
? onion, diced
3 roma tomatoes, sliced
2 TBS all-purpose flour
1 teaspoon dried basil (optional)
Several large fresh basil leaves
3 eggs, beaten
1/2 cup milk
salt and pepper to taste
2 cups grated cheese, divided
1 (9 inch) unbaked deep dish pie crust

Preheat oven to 400 degrees. Bake pie shell in preheated oven for 8 minutes. If it puffs up just poke it back down, no big deal.

Meanwhile, heat 1 TBS olive oil in a large skillet over medium heat. Saute onion until soft; remove from skillet. Pour remaining TBS olive oil into skillet. Thinly coat tomato slices with flour on both sides, sprinkle with dried basil then saute 1-2 minutes-each side. In a small bowl, whisk together eggs and milk. Season with salt and pepper (I hardly used any)
Spread 1 cup shredded cheese in the bottom of pie crust. Layer onions over cheese, and top with tomatoes. Top tomato slices with the fresh basil leaves. Cover with egg mixture. Sprinkle top with remaining cheese.
Bake in preheated oven for 10 minutes. Reduce heat to 350 degrees and bake for additional 20-25 minutes, or until filling is puffy and golden brown.

I originally found this recipe online but altered it significantly to accommodate my taste...the original recipe had no fresh basil-- which is absurd to me. We also let it cool almost completely before cutting it, which is VERY hard to do because we want to eat it right away.

Starving after a run, I decided to cook something...but what!? I looked and I saw I had a lot of chicken and then went ahead and pulled out a lot of vegetables. I tried going online to find an interesting recipe to use on the chicken, but I tired of that quickly and started chopping the chicken and some onions with no clear plan in sight.

I ended up using Trader Joe's Thai Yellow Curry sauce with this chicken recipe. It's very good. I highly recommend it!

Ingredients
• 2lbs chopped chicken
• 2 medium yellow onions, chopped
• 4 tomatoes
• 1lb green beans
• 1 can of coconut milk
• mushrooms
• salt & pepper to taste
• ginger
• olive oil

I put olive oil, the chicken, and onions in a pan and cooked that for about 20 minutes. I foolishly added some water to this in my haste to cook it. I then added the tomatoes. This was also a mistake since they disintegrated once the cooking was finished. Luckily, I had kept about a fourth of a tomato to add once I was near the end of cooking. After the tomatoes were cook I added about half a bottle of the Thai Yellow Curry sauce, cooked that for a bit, then added a can of coconut milk to counteract the strong taste of the curry and the acidity of the now disintegrated tomatoes. After it simmered for a bit, I added the chopped green beans and let that cook for awhile longer. I finally added the tomatoes at the end and let that simmer.

It was delicious.
